Classic Peanut Butter Cookies

I don’t really like peanut butter, but I love peanut butter cookies.. Weird huh? I’ve done these last week.. Based on the reviews, I made some adjustment..

Ingredients
1 cup unsalted butter
1 cup crunchy peanut butter [I added 1/4 cup more]
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour [I added 1/4 cup more]
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda
Method
1. Cream together butter, peanut butter and sugars. Beat in eggs.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
4. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. [Make sure you wet the fork with water first to keep it from sticking to the cookie dough.. Fork sticking to the dough, it won’t be pretty I tell you]
5. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake. [I bake in 350 F / 176 C for about 9 minutes]
The cookies were very good.. Even my mom who don’t like pb loves them..
