The first time I saw this recipe, I immediately wanted to try it out.. but I was really tired that day.. so I didn’t get to.. But yesterday my mum asked me to bake something for my cousins, cos she wanted to go to Melaka.. So I decided to finally try the recipe.. I’ll admit that I’m not really fond of making brownies, cos the outcome always turned out nothing like I expected.. But when I saw the recipe on Nic’s blog, it made me go “Hmmm.. maybe I should try this out”.. cos like Nic said, the recipe involved a “different and rather magical” technique… and by doing it this way, the brownies will come out perfect. .. I was curious to see if the brownies will really come out perfect if I use the magical technique.. and I wasn’t disappointed..

 

 

Ingredients

8 tbsp unsalted butter (1/2 cup) (around 113.4 gm)
4 oz unsweetened chocolate [baking chocolate]
1 1/4 cups sugar
1 tsp vanilla extract
1/4 tsp salt
2 eggs
1/2 cup all purpose flour
2/3 cup walnuts or pecans (optional)

Method

1. Preheat the oven to 400F (200 C) and line an 8-inch square metal baking pan with foil. [I lined mine with parchment paper]
2. Melt the butter and the chocolate together, on top of a double boiler or in the microwave, stirring often until smooth.
3. Transfer the melted butter+chocolate to a bowl. Stir in sugar, vanilla and salt.
4. Add eggs one at a time, followed by flour. Stir until very smooth, about 1 minute. Add nuts, if using.
5. Scrape batter into prepared pan and bake at 400F (200 C) for 20 minutes. [I baked mine for an extra 10 minutes, cos mine wasn’t done yet then]
6. Meanwhile, prepare a water bath. Fill a large roasting pan with water and ice about 1 inch deep. [You can also use the kitchen sink, if you don’t have a large pan.. If your freezer isn’t full, I suggest you simply stuff the brownie pan in there]
7. When the brownies are done - and they will look a bit dry on top - take them immediately from the oven and place in the water bath. Add more ice to the water if necessary. [I just put mine into the freezer.. much easier :D ]
8. Allow to cool completely in the bath before removing the pan and cutting the brownies. Store in an airtight container for up to 3 days.

 

Thank you so much Nic for sharing the recipe with us! Of course hers looked much nicer than mine.. but it does taste wonderful.. It’s crisp on the outside and creamy and soft on the inside.. and the bottom is a bit chewy.. very yummy.. It does taste like the brownies in the box.. I’ll admit that if I had a craving for brownies, I’d use the brownie mix in the box.. cos I like those chewy, moist kind.. .. Now I know how to bake yummy brownies from scratch! *yeay* I don’t need to use the mix anymore… and I don’t have to be embarassed when people asked me “What’s the recipe for this brownies? It’s delicious”.. Hee!

Over the weekend, I decided to try and make “Kek Batik” [Batik Cake].. It has been a long time since I made this.. About 4 years ago? I don’t really remember.. Well, when I made it before, I didn’t even knew the name of the cake and I didn’t use any measurement.. I just threw the ingredients in together - Milo, Condensed Milk, Butter, and Marie biscuits - and it still turned out great.. A lil’ too crunchy though, cos I didn’t mix in the biscuits with the batter for a tad longer.. Well, at that time, I didn’t know why the cake wasn’t soft.. And I was too lazy to find out, cos it still taste great.. Why would I want to change it? Haha..

Last week, I found the recipe below on this site.. and I decided I needed to get off my lazy ass and to try it.. It’s fairly simple.. I think this recipe is great for kids..It’s easy enough to follow, and it’s a milo-chocolatey cake..Do I need to say more?.. Although they will need help from an adult to use the stove..

Ingredients


A:
5 eggs
2 cups of milo powder
(or cocoa powder or half-half, if you don’t like the sickly sweet taste of milo)
1 cup of condensed milk
3/4 cup of water

[I omitted out the nescafe.. but if you want to try it, be my guest]

B:
3 big tablespoons of butter
250g of Marie biscuit
(or Digestive biscuit, if you can’t find Marie biscuit)
